Homemade Apricot Almond Pop Tarts

Homemade pop tarts are one of my favorite things to make. Of course, as a kid I loved store bought pop tarts in every flavor: strawberry, s’mores, brown sugar cinnamon… excuse me while I wipe the drool from my face.

2 cups all-purpose flour
2 tablespoons granulated sugar
1/2 teaspoon salt
1 cup salted butter, cold and cut into cubes
4-5 tablespoons ice water
1 cup apricot preserves
2 tablespoons heavy cream, for brushing
For the almond glaze
1 1/2 cups powdered sugar
1/4 cup heavy cream
1 teaspoon almond extract
sliced almonds, for garnish


  1. In a food processor, mix together flour, sugar, and salt. Pulse in cubed butter, pulsing until the texture resembles a corse meal.
  2. Pour in ice water, then pulse everything together until just combined. If dough is too dry and not coming together, add in another tablespoon of water.
  3. Form dough into 2 equal sized disks and wrap each with plastic wrap. Place in fridge for at least 1 hour, but up to 2 days.
  4. Lorem ipsum dolor sit amet, consectetur adipiscing elit, sed do eiusmod tempor incididunt ut labore et dolore magna aliqua.
  5. Ut enim ad minim veniam, quis nostrud.
